Beijing, 2007 – The Winter season has officially started with the launch of Jaan’s new seasonal menu. Beijing’s most distinguished French fine dining restaurant, helmed by Chef de Cuisine, Guillaume Galliot combines the finest seasonal ingredients and flawless technique to enchant the palates with peerless gastronomic delight. Rich and earthy tones such as beautiful black truffle or aromatic cèpe mushrooms predominate the palette of flavours accompanied by wintery chestnuts or celeriac yet always accented by contrasting strokes of a lighter cuisine reminiscent of the repertoire of southern France
Set to become an instant classic the Caramelized Foie Gras Terrine accented with Sichuan Pepper, Cèpe-Morel Ragout and Duck Jus, combines classic traditions with clever ingenuity: a textured caramelized crust gives way to melt-in-the-mouth foie gras richness, spiced with tingling Sichuan pepper and paired with the earthy goodness of cepes and morels. Jaan’s Lobster Cappuccino, sautéed Crab Cake and Spring Onions is yet another interpretation of a time-honoured dish; intensely aromatic lobster broth is paired with well seasoned crab meat in brioche pastry. Amongst the main courses shine Lamb Rack roast with Spices, crispy Potato and Chanterelles Cannelloni, Liquorice infused natural Jus and Australian Wagyu Beef pan-fried with Thyme and Truffle Sauce - decadently flavourful, the Wagyu beef is accompanied by freshly flown-in French truffles and a deconstructed gratin of macaroni and Parmesan cheese – simply defined as: ‘Irresistible’.
Viciously delicious desserts will leave you spoilt for choice; chocolate being the flavour of the season do not miss the scrumptious Chocolate Banana and Praline Millefeuille, Cocoa Bean Dacquoise and Cocoa Sorbet or the twisty Tempura of Caribbean Chocolate, Bourbon Vanilla Ice Cream and Basil-marinated Kumquats. A special treat this winter and highly addictive is Jaan’s Coconut Milk Rice with fresh Fruit Salpicons, Milk Ice Cream and Dark Valrhona Chocolate Shavings. If only the winter could last…
In addition to the a la carte Menu an attractive 6-course Degustation Menu priced at 788 RMB per person offers the best approach to sampling Jaan’s cuisine; favourite menu items are combined to form a stellar line-up of truly creative and utterly indulgent cuisine.
Lunch sees the weekly changes of the popular Lunch Set Menu attractively priced at 180-220+ RMB per person for a choice of either 2 or 3 courses, ideal for as delicious yet light lunch regardless whether for private or business entertainment.
The French fine dining Jaan Restaurant opens daily from 12:00 noon to 2:00 pm for lunch and from 6:30 pm to 10:00 pm for dinner is located at the 1st floor, Raffles Beijing Hotel Main Building.
