Raffles Beijing Hotel is proud to introduce our Guest Chef Nicolas Isnard from Le Chateau de Curzay, a member of prestigious Relais et Château.
Chef Isnard started his career in the south of France in Avignon not too far away from his birth town of Hyères in the Provence. In 2002 he joined famous 2star Michelin Chef Gilles Goujon staying with him for 3 years as Chef de Cuisine before moving to his current position of Chef de Cuisine at Le Chateau de Curzay in 2006. He re-launched the culinary direction of the Chateau onto the level of “haute gastronomie” and his efforts have been quickly awarded with a first Michelin star and a second to follow…
In terms of culinary inspiration Nicloas Isnard is part of a young group of chefs aiming to bring a fresh approach to the old school French Cuisine. Always sensitive to his surroundings, he quickly discovered his individual style and his approach to food are resonant of the experiences his senses behold. Recognising that there is a distinct focus on "cuisine du terroir" - a return to traditional rustic flavours and emphasis on using quality provincial produce. Chef Isnard advocates the use of local products, hand-picking the suppliers with which he works to be able to obtain the best possible products, his cuisine is unabashedly crafted to suit today’s discerning gourmets.
Chef Isnard will exhibit his talents to connoisseur and food enthusiasts from the 27th November to 2nd December. Signature dishes include the award winning Cigar of Mediterranean Sea Bass with Vanilla Oil.
Finest array of regional French gastronomy will be performed only at Jaan.
