DUBAI, January 2008 – Fire & Ice - Raffles Cellar & Grill at Raffles Dubai offers a menu bursting with new flavours, unusual tastes and creative presentations. Chefs at Fire & Ice – Raffles Cellar & Grill have even developed an innovative cooking method which uses liquid nitrogen to superb effect.

The restaurant enjoys a refined Trans-Ethnic cuisine, prepared with fresh products imported mostly from France and delicately combined with a light Japanese influence, with ingredients frequently used in Asia-Pacific, such as lemongrass, ginger and Wasabi.  The result, a modern cuisine with explosive flavours, is certain to take your senses to new heights. 

In keeping with the restaurant’s name, the elements of fire & ice are brought to the table. For dramatic presentations, nitrogen gel at - 197 Degrees Celsius is used, creating smoky effects to delight the visual sense and surprising the palate with unexpected textures, while prime cuts of sizzling Wagyu and “Cabana” Las Lilas beef and seafood such as lobsters and scallops are prepared on hot Japanese Ishiyaki volcanic stones in the restaurant’s show kitchen.  

A highlight at Fire & Ice – Raffles Cellar & Grill is the eight-course degustation menu, which is regularly changed to maintain its original flair.

To complement the superb menu is a wine list of more than 400 wines, offering the best of both the Old and New World. In addition, approximately 60 wines are available by the glass, and our dedicated Head Sommelier and his team are on hand to recommend wine pairing with each course, for a customized dining experience. 

To complement pre-dinner drinks, the restaurant’s cosy cellar offers a menu featuring 16 exquisite tasters including some of the finest French and Italian cheeses.
