A Culinary Maestro At Raffles Hotel - Executive Chef Eric Costille

Raffles Hotel takes pleasure in welcoming its new Executive Chef, Eric Costille, into its realm of legendary hospitality and culinary wellness.  In this highly coveted position, Chef Costille will preside over the kitchens of Raffles Hotel’s 18 characteristic restaurants, banquet and catering facilities, Raffles Culinary Academy as well as to mastermind the next episode of Raffles Wine, Food and Arts Experience.    

Hailing from picturesque Mougins, in Provence, France, where an acclaimed oasis of culinary excellence prevails, Chef Costille was groomed in his parents’ restaurant since his youth.  No stranger to the fine finesse of culinary art, Chef Costille went on to acquire a diploma at the Sables d’Olonnes hospitality school and spent a decade intensively training in three and two-star Michelin restaurants throughout France. 

Fluent in English and French, Chef Costille’s work stints took him to the USA, Philippines, Japan, Indonesia and South Korea, as well as honing his craft at Michelin-star restaurants which include three stars Moulin De Mougins in Cannes, France and Georges Blanc Restaurant in Vonnas, France and two stars La Belle Otero & Casino Club and L’Amandier De Mougins, both in Cannes, France.  Just prior to joining Raffles Hotel, he was the Executive Chef at Ritz-Carlton in Seoul, South Korea.

Having sharpened his senses with extensive travel and polished his culinary skills through dedicated research and practice, Chef Costille has developed a high sensitivity to the pulse of his adopted country’s gourmet partiality and is profoundly perceptive to global dining trends.  He animates one’s senses by adventurously interweaving his classical techniques with contemporary touches, which had previously led to his successful win at the Edible Art culinary contest in Boston.
