“1887 by André is my love letter to the city that shaped me.”
Chef Patron André Chiang
Heritage gastronomy, thoughtfully reimagined
1887 by André is a refined expression of heritage gastronomy, where history, culture and craft are reinterpreted through modern French culinary techniques. Led by visionary chef patron André Chiang, the restaurant draws inspiration from the rich legacy of Raffles Hotel Singapore and the city’s role as a global crossroads. Set within the hotel’s historic formal dining room, 1887 by André presents an immersive dining experience that honours time-honoured traditions while embracing contemporary expression.
The journey is complemented by a carefully curated beverage programme that bridges old and new worlds, creating a setting for meaningful celebrations and timeless gatherings.
