Constantly in search of aromatic complexity, new flavour combinations and powerful tastes that evoke emotions, she brings unique creations to the plate, in a dining room of charismatic, shimmering beauty. Perfectly paced set menus for lunch and dinner, abundant with the produce of the season, are complemented by the wine choices of skilled sommeliers.
Anne-Sophie Pic
Like Raffles, Anne-Sophie Pic's family culinary heritage spans more than a century, as her great grandmother established L'Auberge du Pin in 1889. The three Michelin-starred French chef hails from a line of Michelin-starred chefs, starting with her grandfather, André Pic, and father, Jacques Pic. She grew up in her family's restaurant, Maison Pic, in Valence, south-east France, which first garnered three Michelin stars in 1934, under her grandfather. “Just like this beautiful hotel, we are storytellers and constant seekers of excellence. Together, we share the vision to provide distinctive experiences to our guests, delivered with innovation that combines both tradition and change.”
A Michelin star for La Dame de Pic

Anne-Sophie Pic's culinary signature
Discover berlingots
One of Anne-Sophie Pic's many exquisite signature creations are the berlingots – distinctive pasta parcels found in all of her restaurants around the world. Individual slight adaptations are made to reflect the character of each establishment’s locality. At La Dame de Pic, Raffles Singapore the signature berlingots & white mille-feuille are inventively filled with Brie de Meaux cheese and courgette, with Asian flourishes such as a touch of cardamom and ginger.
Anne-Sophie Pic constantly seeks complex new flavours, exploring each ingredient's full aromatic spectrum and combining flavours in clever ways. Bitterness is a common thread that guides her creations, as she works to reveal the underlying rare flavours within vegetables, herbs, flowers, fish and meat. She enjoys combining bitter flavours with sharp or tart notes, to bring depth to a dish and turn the dining experience into a multi-sensorial episode.
Guests will discover refined dishes that reflect Anne-Sophie's French culinary roots, with adapted flavour combinations, cooking techniques, complex sauces and produce from local markets. Anne-Sophie delights in discovering new ingredients, farmers and producers on her global travels, and is curious to enrich her culinary world with new inspiration.
Gracefully blending soft pink hues and rich plums with grey clay tones and metallic accents, La Dame de Pic's 46-seat interior is one of pure contemporary chic. Centre stage is a gold chandelier composed of tiers of discs with laser-cut spades, a play on ‘La Dame de Pic’ which translates to ‘queen of spades’; while a peony bas relief also adorns the ceiling. A space of charm and enchantment, with bold, charismatic contrasts to reflect what is presented on the plate.
