Putra Anom
Putra Anom Gentar Alam has always had a sweet tooth. As a child, he would save up his allowance to buy jajanan and other sweet treats, and not surprisingly he was drawn to a career in the culinary arts. He holds a Hotel Management degree from STP Sahid and a Masters degree in Gastronomy & Nutrition from Trisakti Institute of Tourism. Chef Anom joined Raffles Jakarta as pastry chef in July 2021 having previously worked at One & Only Royal Mirage, Dubai, The Ritz-Carlton, Dubai and, most recently, The Ritz-Carlton, Jakarta Pacific Place. Chef Anom is constantly experimenting with flavour profiles in his pastries, marrying classic French techniques with Indonesian flavours and fruits such as local citrus and guava, his favourite. His Floral Afternoon Tea is a medley of floral-infused sweets featuring the fragrant jasmine honey chou, apricot and elderflower, the lovely pistachio rose tart, the sweetness and fragrance of orange blossom chocolate, and his signature yuzu with lavender sphere.
