Generous, balanced dishes highlighting grains, seafood and seasonal vegetables illustrate how sustenance can evolve into wellness. Preservation and fermentation — yoghurt, pickling, smoking, drying — amplify both flavour and nourishment. Rooted in Levantine tradition yet effortlessly cosmopolitan, by day the room is bright with sharing platters, while at night it becomes an intimate stage for slow dinners.
